Paramount Coffee Project: Life happenings with a side of brunch

Hello desolate space…apologies for the prolonged hiatus. As per usual university ‘nerding’ was to blame. The final semester of degree was nothing short of exhausting and stressful but I can very happily say that those days are now behind me! Following my final set of exams I indulged in a glorious period of brunching with friends before the highly anticipated arrival of my mother who I have missed dearly.   A hectic week of packing ensued. ‘Why?’ You may ask.

After much thought and changes of heart I finally decided to take the leap of faith <insert that unforgettable scene in How I Met Your Mother where they leap onto the neighboring apartment roof top>

…and venture over to Singapore for one year of work.

Now that all crazy shenanigans have ended I can rekindle my love for this blog, which is in dire need of some TLC.  So hello again … but from Singapore!

Over the past year my foodie appetite was stunted due to much time devoted to study thus I was determined to tick off a number of places on my ‘wish-list’ yet to be tried. Let us start with my trip to the famously instagrammed Paramount Coffee Project in Surry Hills.

My dear friend Queen P was visiting from Thailand and for the first time in three years the stars finally aligned and we were able to embark on a chat-, food- and retail-filled day. Queen P is one of those friends that exudes a confidence and energy that is truly wonderful to be in the presence of, much like Queen B(eyonce) herself and a perfect fit for the vivacious environment of PCP. Located in the previous Paramount Film Offices in Surry Hills, the high ceilings and infiltrating sunshine generated a fantastic ambience.

A Boy to Man: Basic Military Training Graduation

For the last six months I have been travelling between Sydney and Singapore, visiting my Lil’ Bro who has undergone quite a dramatic life-change; moving to Singapore (post-HSC) for National Service.  Although there was initial worry for him, in terms of adapting to such change, Lil’ Bro took the challenge with a determined and positive attitude and recently graduated from his Basic Military Training.

The final challenge of this component of his service was a 24km route march from the Training Centre to the majestic location of the Floating Platform at Marina Bay, which is surrounded by the beautiful icons of the city.  Following this gruelling but what Lil’ Bro describes as an emotional and breathtaking march, symbolic of their 10 week intensive training, the ‘recruits’ take part in their ‘Passing Out Parade’ (shortened to POP) where they are met by their family and friends.

This event was highly anticipated by my family, however my suspicions are that I was the most eager of all.  The night before the POP, I set numerous alarms to ensure that we would be able to secure front row seats for the best photo opportunities – I was out of my bed at 4.00am.  My parents and aunt were amused by my eagerness, especially when we ended up being the first to arrive at Marina Bay although I insisted that we were already arriving very late!

Tiong Bahru Heritage Trail I: Flock Café, Singapore

Hello and Happy New Year!  I hope everyone had a wonderful festive season and 2014 has taken off with success :).

In parallel with the start of a new year I thought it would be appropriate to share with you all a ‘fresh visit’ to a place which I have explored before…

What is a new year better for than discovery?

In the past, I have written about what has been described as the ‘achingly hip’ suburb of Tiong Bahru, Singapore.  Each trip to Singapore usually includes a stroll through the neighborhood, however this year Papa was determined to follow the ‘Heritage Trail’.  Thus an ordinary family outing become one which provided new experiences and discoveries.

With what seems to be a perpetually developing café scene in Singapore, we stumbled upon a spot which I had been meaning to track down last year!  To my surprise I crossed a small laneway and found Flock Café’ at the corner of an old apartment block.

A quaint and narrow premises holds what has become a foodie hot-spot as well as a hit with the expatriate crowd.  

Features: Mumma reckons their coffee is one of the best that she has tried in Singapore and my Iced (Flat) White made the humid and warm exterior a distant memory.

Must-try dishes: Eggs Benedict and Pancakes

Perfectly poached eggs and a perfectly balanced (not overly rich) Hollandaise

Fluffy…I mean ‘cloud-like’ fluffy pancakes and a generous amount of compote

If you have enough stomach space….: Big Breakfast

If you are looking to experience something other than the hawker scene in Singapore, which in my case I have eaten quite repetitively, this is the perfect location.  Good food at modern café appointed in an area with old-time charm….yes please…

The Papaya Series

The idea of ‘papaya’ has always had two connotations for me:

  1. Singapore – super sweet and super cheap
  2. Sydney – not fantastic and super expensive

Upon my return from Singapore the tables were turned….

Showered with an abundance of rock fruit upon my return from Singapore, such as my favourite Queen Peach I almost strolled past the papaya stand without a second glimpse.  Luckily for me I was shopping with Mumma who spied some ripe looking slices of papaya, so we took some home for a test run.  One word – heaven.  Ok, maybe a few more – “let’s go buy some more”.

I returned home with 2 of the juiciest, sweetest papayas that just tasted like summer!  With Mumma’s busy work schedule and the fruit aversion of Lil’ Bro and Pappa, I was ‘forced’ to tackle most of these babies by myself – such a hard task!

Part of my aim to establish a more healthy routine was breakfast.  During semester there is hardly enough time to really sit down and enjoy this meal, so I made a pact to cook up some delicious breakfasts in the time that I have now.  Papaya incorporated breakfasts?!  I was one happy, healthy girl!

Rolled oats with banana, sliced papaya topped with a dollop of Chobani Greek Yoghurt, a sprinkle of cinnamon and a drizzle of honey.

Papaya and cream cheese on toast – inspired by the Asian Papaya Milk smoothies!

(Complimented by Peanut Butter and Banana with Honey + Nutella :P)

Letting the papaya shine one its own, topped with Chobani Greek Yoghurt, Honey and a sprinkle of cinnamon.  This combination really brought out the best in the flavours of the papaya, especially with a drizzle of lemon juice.  The acidity really kicked the sweet and sour to a fresh, vibrant taste!

A return trip to the shops the next week was a sad one – the papaya season was short lived!  Until next year!!
